A little overview of Fribourg’s vernacular, the same that uses mustard like jam, and vice and versa: the Bénichon! Our chef pays tribute to this famously long menu that will be shorten a bit for the occasion – even subtly re-interpreted, taking the risk to unleash the most bloodthirsty purists’ wrath, but will contain cuchaule, jambon à la borne (local specialty of smoked ham) and Vacherin AOP!
