LAUSANNE À TABLE ‘S BIRTHDAY Cakes!

In keeping with its gourmet character, Lausanne à Table celebrated its tenth anniversary with a birthday party worthy of the name! To achieve this, talented pastry chefs from Lausanne met at the Lausanne Palace and have prepared their most beautiful creations in honor of the ten years of the association. Each more delicious than the last, it was difficult for the public to choose the best birthday cake!

The 100% chocoLATE CAKE FROM Ackermann Artisan Boulanger

To the delight of gourmets, Ackermann Artisan Boulanger has chosen to work with the theme of chocolate. The result: a chocolate trio symphony, composed of three different mousses, a reconstituted chocolate and nut brownie, and a joconde biscuit. All decked out with a pavé glacé, chocolate lovers have found their happiness.

The BAKER’S CAKE FROM THE Bread Store bAKEY

Pour s’aligner au cœur de son métier, la Boulangerie Breadstore a choisi de présenter un gâteau boulanger sous forme de couronne en brioche feuilletée, chocolat praliné amande et noisette. Un goût qui rappelle la douceur de l’enfance !

tHE sTRAWBERRY-pISTACHIO CAKE FROM MAISON BUET

As a visual reminder of Lausanne à Table, Maison Buet has reproduced its chocolate logo, decorated with a view of Lausanne! For the cake, the choice was a strawberry mousse, a pistachio Genoa bread biscuit, accompanied by a pistachio crisp, a strawberry compote, and a pistachio mousse. To enjoy this fresh and seasonal cake, a small 100% chocolate spoon is placed next to each piece of cake!

LEMON-PRALINE CAKE FROM MONCO’PAIN BOULANGER

Monco’Pain Boulanger has created a cake based on the feeling of lemon and praline, combining acidity and sugar in an ideal balance! Composed of a two-lemon mousse, a creamy praline interior, a crispy coconut praline, and a madeleine biscuit.

CUPPIN’S MOJITO CAKE

Just like their specialty, Cuppin’s has crafted a “Cake Design” illustrating Lausanne from top to bottom. For the cake, the choice was a vanilla Genoese base, a lime ganache and a strawberry confit, fresh strawberries, and a lime mint gel for a summery taste. A non-alcoholic mojito-inspired cake, smoothed over with mascarpone whipped cream.

NOZ CHOCOLATIER’s PASSIONATE CAKE

“Because we passionately love Lausanne à Table” says Madame Noz, the cake created by Noz Chocolatier is made of bitter almond chocolate biscuit and dark chocolate ganache, covered with a passionfruit mousseline!

LAUSANNE PALACE’s Traditional cake

In addition to hosting the association’s birthday snack, the Palace’s pastry chef invited himself to the party to offer a traditional cake, like the palace: a Saint-Honoré. Based on caramelized cabbage, vanilla cream, Madagascar vanilla, and whipped cream, everything is set on puff pastry, then superimposed on nine layers.

SEDEF PÂTISSERIE’s Mystery cake

The Sedef sisters decided to make a surprise, offering a cake with secret ingredients. Refined palates were able to identify its composition: a cabbage crown, a hazelnut butter almond biscuit, and a Kalamansi concentrate, all accompanied by a verbena cream, strawberry gel and fresh strawberries. To represent Lausanne à Table, the sisters relied on local ingredients, resulting in a cake to be shared!

THE REVISITED Cake from CHEZ SÉVERINE AND LUCA’s Bakery

Big winners of the Salted sugar (salée au sucre) Trotte, Séverine and Luca showed that salty is not the only sweetness they have mastered! For the anniversary of the association, they have proposed a timeless cake with ingredients available all year round: a revisited cheesecake, a creamy Kalamansi and a chocolate feuillantine.

At the end of this colorful and high-sugar afternoon, the guests of Lausanne à Table chose their favorite cake. Drum roll…

The puff pastry brioche crown from Bread Storehas conquered the hearts and taste buds of the public! This sweetness is available in their shops until the end of the year, so don’t wait any longer and go taste the cake that delighted the guests of the Lausanne’s birthday snack at the Table!

As for the chefs, they also had their say on their favorite cake: the mystery cake of the Sedef sisters!
